Our mission is to serve delicious comfort food that everyone can enjoy, regardless of dietary restrictions. We pride ourselves on offering a diverse, affordable, and quick menu that includes gluten-free, vegan, keto, and celiac-friendly options. We believe that everyone deserves to indulge in great-tasting food that feels like home, without compromise.

About the Owner:

Driven by my own struggles with dietary restrictions and the challenge of finding quick, accommodating meals during late nights or short work breaks, I was inspired to create a unique fast-food experience. Along with Carmen, I developed a quick-service restaurant concept dedicated to offering delicious comfort food for everyone, regardless of their dietary needs. This passion comes from a deep understanding of the frustration faced by those with dietary limitations and a commitment to ensuring no one has to compromise on taste, speed, or quality—no matter their diet.

The mission of Make a Mac resonates deeply in today’s fast-paced world, where convenience often comes at the cost of nutritional consideration and inclusivity. Felicity and Carmen have not only filled a gap in the fast-food industry but have also created a space where food brings people together, regardless of their dietary paths.

I can’t stress enough how affordable this food was. Great value for what you get.

Make a Mac Menu

You build a bowl similar to how you’d build a bowl at Chipotle or something.

Pasta

You’ll be choosing from Elbow, Spiral, or Shell (normal) pasta or Keto, Vegan and Gluten Free (specialty) pasta. Once you choose the pasta, you’ll pick the cheese.

Cheese

You have 4 cheese options to choose from. Yellow, White, Spicy, or Vegan/Dairy Free. Each cheese has a unique flavor.

Toppings

This is where it gets exciting. There are so many toping to choose from. When you build your own bowl, 2 toppings are included and the rest are around $0.65 each.

My Thoughts:

During my visit to Make a Mac, founded by Felicity Short and her partner Carmen Acotto, I was introduced to a revolutionary concept that redefines fast food for those with dietary restrictions. The inspiration behind Make a Mac sprouted from Felicity’s personal struggles and the realization that many others faced similar challenges in finding quick, accommodating eats that didn’t compromise on taste or dietary needs. This visit wasn’t just about savoring a bowl of Mac N’ Cheese; it was about experiencing a vision brought to life for inclusive comfort food.

I was excited to try the different options that they had to offer, although it was hard to decide which toppings to pair with what. Should I make a bacon Mac and Cheese bowls? Add Chicken? Which cheese color? So many choices, so I trusted the owners and tried the Owner’s Favorite. (Which was incredible btw) The pesto drizzle was a nice touch.

Where is Make a Mac Located?

Make a Mac is located in Mesa, Arizona at 6140 E main st. You'll find it in a little shopping plaza, next to the Goodwill store.

Is Make a Mac Expensive?

No, Make a Mac is not expensive. Most bowls are under $10 and really filling. You have the option to build your own bowl and load it up with as many toppings as possible, but it's still affordable if you go that route.

Is Make a Mac a drive-thru or dine-in?

Make a Mac is a drive-thru only concept. There are no dine in options currently.
